This is something that my mom use to make when I was younger.
2 cups glutinous rice flour (important that it is glutinous for it to rise)
1/3 cup sugar powder or as needed
2 cup water
2 teaspoons instant yeast
2 tablespoons warm water
1/2 teaspoon baking powder
You will also need:
A rice steamer and metal containers (pie or cupcake pans) to hold the batter while inside the steamer.
Fully dissolve the yeast in warm water in a small bowl.
In a larger bowl, mix the flour and water.
Pour the yeast mixture into the bowl with the flour mix and stir until you get a creamy texture.
Cover with saran wrap and place in warm location.
Let sit unit the mixture rises and doubles in height. (1-2 hours depending on room temperature).
Add sugar and remix the batter.
Spray the containers with oil spray and pour the batter into them. Placed inside the steamer.
Steam for 15 minutes to 20 minutes. Turn off heat and let sit 5-10 minutes before lifting lid.
